珍味 specifically means an unusual or exotic delicacy, often something like sea urchin or fermented soybeans. ご馳走 is a broader term for a feast or special meal. Using 珍味 for a fancy steak dinner would be odd.

Steak is not a delicacy (in the exotic sense).
When describing a person as delicate (sensitive, easily hurt), 繊細 is appropriate. For physical fragility, か弱い (よわい) or 華奢 (きゃしゃ) might be better.
