穡 centers on gathering crops: the act of harvesting grain or other agricultural produce.
穡 combines 禾 (grain plant) with 嗇, which is associated with storing or gathering. Together they express harvesting grain.
The left side 禾 is a grain plant, and the right side 嗇 looks like a storehouse with a roof and walls. Picture grain being cut and brought into the storehouse: that is the harvest.
For ショク, imagine a shock of grain being gathered at harvest time: shock -> ショク, and the grain is stored away.
