Katsuobushi is fully dried and often shaved into flakes; namaribushi is boiled and only partially dried, retaining more moisture and a softer texture.
From 生り (namari, 'half-dried') + 節 (bushi, 'dried fish fillet'). The reading なまぶし is a variant using 生 (nama, 'raw/fresh').
