吹き曝し is a more common variant without the geminated っ; both mean the same, but 吹きっさらし has a slightly more emphatic or colloquial feel.
From 吹き (continuative form of 吹く 'to blow') + っさらし, an emphatic or colloquial variant of 曝し/晒し (from 曝す/晒す 'to expose'). The geminated っ adds emphasis.
