あんぽ柿がき

partially dried Japanese persimmon

A specialty of Fukushima Prefecture; persimmons are peeled, briefly sulfur-fumigated, and dried until the inside is soft and jam-like while the surface firms up. Often contrasted with fully dried 干し柿.
