A thick, sweet-savory sauce made by reducing soy sauce, mirin, sugar, and sometimes eel broth. Brushed onto grilled eel (unagi) or other sushi toppings.
For grilled eel, brush on plenty of sweet eel sauce.
This sweet eel sauce is made by simmering down soy sauce and mirin.
