The right side 卩 looks like a person kneeling down right next to something. Imagine someone kneeling instantly beside a situation, ready to conform or adapt on the spot. That immediate, direct presence is 即.
For ソク, picture a sock pulled onto a foot in one instant motion: sock -> ソク, and the action is immediate, just like the meaning of 即.
