kamebushi; turtle-shell-shaped dried bonito
A flat, turtle-shell-shaped cut of dried bonito (katsuobushi). Used in Japanese cooking, especially for making dashi. Compare with 鰹節 (katsuobushi), the general term for dried bonito flakes.
