godan verb (-ru), intransitive verb
Describes liquids or soft substances becoming firm or jelly-like, often from cold. Used for broth, gravy, aspic, or similar foods. Not typically used for water freezing into ice (use 凍る).
Nikogori is made when broth cools and congeals.
When I left it in a cold place, the soup congealed and became like jelly.
The soup congealed into jelly after it cooled.
The fat in the simmered dish has congealed as it cooled.
