100% buckwheat soba; juuwari soba
Soba noodles made exclusively from buckwheat flour, without wheat flour. Often contrasted with 二八蕎麦 (nihachi soba), which contains wheat. Prized for its strong buckwheat flavor and aroma, but can be more brittle.
