Rare term for a traditional method used in Kyoto suguki pickle making: a weight is hung on a staff used as a lever to press the top of the vat.
In Kyoto suguki pickling, there is a traditional pressing method called tenbin-oshi.
Compound of 天秤 (tenbin, 'balance scale') and 押し (oshi, 'pressing'), referring to the lever-and-weight mechanism used in the pickling process.
