A cooking technique where ingredients are first stir-fried or pan-fried, then simmered in a seasoned liquid. Common in Japanese home cooking.

炒める means to stir-fry or sauté; 炒り煮 adds a subsequent simmering stage.
Standard kanji spelling using 炒 (stir-fry) and 煮 (simmer).
Kana-kanji mixed spelling; used when the kanji 炒/煎 are not preferred.
Alternate spelling using 煎 (roast/pan-fry); less common than 炒り煮.
Compound of 炒り (iri, 'frying', from verb 炒る iru) and 煮 (ni, 'simmering', from verb 煮る niru).
