A regional sushi style, often associated with Ishikawa and Toyama prefectures, where vinegared rice and toppings are wrapped in a bamboo leaf (笹).

I had sasazushi, a local specialty of Ishikawa Prefecture.
From 笹 (sasa, 'bamboo grass') + 寿司 (sushi). Named after the bamboo leaf used to wrap the sushi.
